Garum, a fermented fish paste served with olive oil, salt, basil, and bread was a favorite of the Roman nobility. I can imagine that one of the drawbacks of working at a garum factory would be the smell. I was fortunate to visit the ruin of one of these factories just outside of Larache, Morocco in 2007. The site is desolate and pensive. It wasnt until i was scratching around in the dirt for an hour that i noticed and old man sitting no more than 15 feet away watching me with a grin, he was the grounds keeper.
